Ingredients:
35ml Disaronno Amaretto
35ml Goji berry juice
50ml Pomegranate juice
1 dash Angostura Aromatic Bitters
A squeeze of lemon juice





Method: Pour all the ingredients into a highball glass filled with ice cubes and stir until cold. Add a bit more ice and a piece of lemon.
For larger, party version, multiply the ingredients by five and make in one litre jugs.

Ingredients:
100ml Disaronno Amaretto
2 whole peaches, peeled and de-stoned
1 tablespoon caster sugar
1 lemon
300ml strongly brewed Earl Grey tea

Serves 4-5



Method: Take the de-stoned and peeled peaches and place them in the bottom of a jug with the sugar.
Brew up 300 ml of Earl Grey tea (use 300mls of water and six tea bags and brew for about a minute). Allow to cool a little so that it is not boiling but still hot. Pour the tea over the sugar and the peaches and, using a fork or potato masher, pureé the peaches in the sugar and tea. Add the Disaronno and some ice and stir until cold adding more ice if necessary. Now that it’s nearly ready, keep refrigerated between preparation and serving. Just before serving, add the fresh juice of half the lemon, chopping the remaining half into slices to garnish your ice tea.
Serve with a few small glasses.
